
Celeriac Slaw
Celeriac is a knobbly aromatic root with a delicate flavour. It has bags of cooking potential and makes sweet, smoky mash, beautiful soup and a warming roasted veg. This is a very flexible dish, add blue cheese, toasted seeds and nuts, or other winter veg like carrots, red cabbage or red onion. Delicious!
Ingredients
- 1 celeriac medium
- 1 apple
- 10 tbsp mayonnaise or half and half with yoghurt
- 2 tbsp dijon mustard
- 1/2 lemon juiced
- handful walnuts
- handful raisins
- handful parsley
Instructions
- Peel and core celeriac and apple. Squeeze the lemon juice on both to stop oxidisation. Either grate, julienne or chop both into matchsticks.Put the celeriac and apple in a bowl.
- Mix together the mayonnaise (and yoghurt) with the dijon, remaining lemon and nuts, raisins and chopped parsley. Cover the celeriac and apple with a generous portion of the mayonnaise dressing.
