Celeriac Slaw
Celeriac is a knobbly aromatic root with a delicate flavour. It has bags of cooking potential and makes sweet, smoky mash, beautiful soup and a warming roasted veg. This is a very flexible dish, add blue cheese, toasted seeds and nuts, or other winter veg like carrots, red cabbage or red onion. Delicious!

  1. Peel and core celeriac and apple. Squeeze the lemon juice on both to stop oxidisation. Either grate, julienne or chop both into matchsticks.Put the celeriac and apple in a bowl.
  2. Mix together the mayonnaise (and yoghurt) with the dijon, remaining lemon and nuts, raisins and chopped parsley. Cover the celeriac and apple with a generous portion of the mayonnaise dressing.
